Honestly, when you get to Chiang Mai you must have a Kao Soy Chicken dish. Essentially, its a mild curry based dish with a chicken drumstick and some fried noodles with some green vegetables in it. The dish is only common in the northern part of Thailand around Chiang Mai. I highly recommend it.
The next dish you must have is the Hainan Chicken dish. Hainan Chicken is a famous dish originated from Hainan Province in China and its a very common dish in southern China esp. in Guangdong and Hong Kong. It is also relatively common in Singapore and Malaysia amongst Chinese descendants esp. most are originated from the Southern Chinese provinces. I stumbled across this place in central Chiang Mai and the ethnic Chinese descendants from Thailand have a slightly different variation of the Hainan Chicken to what I'm use to in Australia or Singapore. Nevertheless it was simple and delicious (as pictured below). You must go try it when in Chiang Mai.
